One Pot Creamy Sausage & Broccoli Pasta - My Fussy Eater

A delicious and easy mid week family meal of Creamy Sausage & Broccoli Pasta, all cooked together in one pot on the hob!

I’m a big fan of One Pot Recipes. When you need to get dinner on the table fast in the middle of the week, there’s nothing like a quick and easy recipe that can be whipped up in no time at all. And it also means less washing up too which is never a bad thing!

How To Make One Post Sausage & Broccoli Pasta

The first step is to remove the skins from the sausages and fry the meat in a little oil in a large pan.

Next, add in pasta, chicken stock and milk and cook for six minutes.

I used bowtie pasta but any pasta shapes will work just fine.

Then the broccoli gets added and you continue to cook for another six minutes.

It’s important to keep stirring regularly so that the pasta all cooks evenly and doesn’t stick to the bottom of the pan.

Once the pasta and broccoli are cooked and the liquid has been absorbed, turn of the heat.

Then add some creme fraiche along with grated parmesan. And that’s it! A super simple family meal ready in just 20 minutes!

Ingredient Substitutions

Sausages – I used chicken sausages but pork, turkey or veggie sausages will work too.

Pasta – I used bowtie pasta but any shapes will work.

Stock – I used chicken stock but feel free to use veggie stock instead.

Creme Fraiche – If you can’t get creme fraiche then use cream cheese instead or else a splash of cream.

Parmesan – This can be substituted for grated cheddar cheese if you prefer.

How To Get My Kids To Eat Broccoli

My kids are not fans of broccoli at all so they were initially put off this meal by the sight of it in the bowl! I allowed them to move the broccoli to one side of the bowl while they ate the pasta and sausages. I encouraged them to try just a small bite of the broccoli, letting them know that if they didn’t want to eat anymore then that was fine.

In the end they both had two small bites of the broccoli and left the rest. That to me is progress! Don’t be disheartened if you children don’t immediately tuck into the broccoli. It will take some time and lot of exposure to get them there and that’s ok!

Can I Serve This To Weaning Babies?

This recipe is probably a little too high in salt to serve to babies as it is. I would suggest looking for some lower salt sausages and serving up babies portion before you add the parmesan. You could always add a little grated cheddar cheese to babies portion instead.

Ingredients

  • 400g sausages
  • 0.5 tbsp oil
  • 350g pasta
  • 600ml chicken stock
  • 600ml milk
  • 250g broccoli
  • 3 tbsp creme fraiche
  • 50g grated parmesan 

Instructions

  1. Remove the skins from the sausages and add the sausage meat to a large pan on the hob along with the oil.
  2. Cook for 5 minutes, breaking the sausage meat up with a spoon. 
  3. Add the pasta, stock and milk.
  4. Bring to the boil then cook on a low simmer for 6 minutes, stirring regularly.
  5. Cut the broccoli into medium sized florets and add that to the pot.
  6. Continue to cook for another 6 minutes, again stirring regularly.
  7. Turn off the heat, add the creme fraiche and grated parmesan and stir well.
  8. Serve immediately.

Notes

This recipe can be kept in an airtight container in the fridge for up to 2 days and reheated in the microwave or on the hob. It can also be frozen and defrosted overnight in the fridge.
